Cocotte-feves-aul-lard

Ingredients:
 
• 500 mL of white beans
• 100 g. salted bacon diced
• 1 large onion, peeled and cut into 4
• 125 mL of molasses
• 1/3 cup of brown sugar
• 1 C. dry mustard
• Pepper

Preparation:

1. Cover the beans with fresh water and soak them overnight.
 
2. The next day, rinse well, put them in a large pot and cover them with water once more.
 
3. Bring to the boil and simmer for 1 hour or until the skin begins to crack.
 
4. Rinse the beans.
 
5. Line the bottom of a pot with half the salted bacon, then cover with half of the beans.
 
6. Drizzle onion pieces, then add molasses, brown sugar, pepper and dry mustard.
 
7. Add a new layer of salted bacon, then the rest of the beans.
 
8. Add water until the beans are covered.
 
Put in the oven at 250 ° F for 6 hours, mixing gently every 1h30.
